Shahi Jeera Rice Recipe: Fragrant Pulao in 25 Minutes
Quick answer: Shahi jeera rice is basmati rice cooked in ghee that has been tempered with shahi jeera (black cumin), a tej patta and a few whole spices, then steamed on low heat until every grain is separate. It takes about 25 minutes, and the trick is to soak the rice, fry the shahi jeera only for a few seconds, and leave the lid on while it rests.
Regular jeera rice is a weeknight favourite, but swap in shahi jeera and the same simple pot of rice smells like a wedding pulao. The seeds are thinner and sweeter than everyday cumin, so you need very little to make the whole kitchen fragrant.
Also known as: shahi jeera pulao, black cumin rice, Kashmiri cumin rice, kala jeera rice. Shahi jeera itself is called black cumin or Kashmiri cumin in English (botanical name Bunium persicum).
What do you need for shahi jeera rice?
This makes 3 to 4 servings as a side with dal or curry.
- 1 cup basmati rice
- 1¾ cups water (for soaked rice, open-pan method)
- 2 tbsp ghee
- 1 tsp ODM Shahi Jeera (Black Cumin)
- 1 tej patta (bay leaf)
- 2 green cardamom pods, 3 cloves and a 1-inch piece of cinnamon (or a small pinch of whole garam masala)
- 1 small onion, thinly sliced (optional)
- ¾ tsp salt, or to taste
- Fresh coriander to finish
How do you make shahi jeera rice step by step?
- Wash and soak. Rinse the rice 3 to 4 times until the water runs almost clear, then soak it for 20 to 30 minutes. Drain well.
- Warm the ghee. Heat ghee in a heavy pan on medium-low. Add tej patta, cardamom, cloves and cinnamon and let them sizzle for about 20 seconds.
- Add the shahi jeera last. Drop in the shahi jeera and stir for only 5 to 10 seconds, until it smells nutty. It is thinner than regular jeera, so it burns faster.
- Onion (optional). Add the sliced onion and fry until light golden, about 3 to 4 minutes.
- Coat the rice. Add the drained rice and stir gently for 1 minute so every grain is coated in ghee. Do not mash.
- Cook covered. Pour in hot water and salt, bring to a boil, then cover tightly and cook on the lowest heat for 12 minutes.
- Rest. Switch off the heat and leave the lid on for 5 to 10 minutes. Fluff with a fork, top with coriander and serve.
In a pressure cooker, use about 1½ cups water for 1 cup soaked rice and cook for 1 whistle on medium, then let the pressure drop on its own. Water needs vary with the age of the rice, so treat these as a starting point.
Why is my jeera rice sticky or bitter?
| Problem | Likely cause | Fix |
|---|---|---|
| Sticky, mushy rice | Too much water or stirring while cooking | Reduce water a little next time and do not stir after the water goes in |
| Bitter taste | Shahi jeera burnt in hot ghee | Keep the heat medium-low and add the seeds last, for a few seconds only |
| Grains breaking | Rice not soaked or stirred roughly | Soak 20 to 30 minutes and fluff gently with a fork |
| Weak aroma | Old seeds or too little ghee | Use fresh shahi jeera and do not cut the ghee too much |
Shahi jeera or regular jeera: which should you use?
Both work, but they taste different. Regular jeera gives a warm, earthy, familiar flavour. Shahi jeera is sweeter and more perfumed, which is why it is used in biryani and Mughlai dishes. If you only have regular jeera, use about double the amount. To see exactly how the two seeds differ, read our guide on jeera vs shahi jeera.

What goes well with shahi jeera rice?
- Dal tadka or dal makhani
- Rajma or chole
- Paneer butter masala or any rich gravy
- Plain boondi raita with a pinch of roasted jeera
Shahi jeera loses its aroma faster than you might think once the pack is open, so keep it in an airtight jar away from the stove. FAQ
What is shahi jeera rice called in English?
It is usually called black cumin rice or Kashmiri cumin rice. Many menus simply list it as shahi jeera pulao.
How much shahi jeera should I use for 1 cup of rice?
About 1 teaspoon is enough for 1 cup of basmati. Shahi jeera is strong and aromatic, so start small and add more next time if you want a stronger flavour.
Can I make shahi jeera rice without onion?
Yes. The onion is optional. Without it, the rice is lighter and the shahi jeera aroma comes through even more clearly, which also makes it suitable for no-onion meals.
