Chuwara vs Khajoor: Dry Dates vs Fresh Dates Explained

Quick answer: Khajoor is the soft, moist date you eat fresh, while chuwara (also spelt chhuhara) is the same fruit picked firmer and then dried until it turns hard, chewy and long-lasting. Use khajoor when you want instant softness and caramel sweetness, and chuwara when you want something that keeps for months, soaks well in milk and suits winter sweets and prasad.

Most of us grew up with both in the house: khajoor in a box on the dining table, and a packet of chuwara tucked away for winter milk or a wedding thaal. They look related, and they are, but they behave very differently in the kitchen.

Also known as: Chuwara is called dry dates or dried dates in English (chhuhara, chuara, kharik in Marathi, kharek in Gujarati). Khajoor is simply dates or fresh dates in English (pericham pazham in Tamil, kharjuram in Telugu, khejur in Bengali).

What is the real difference between chuwara and khajoor?

Both come from the date palm. The difference is the stage at which the fruit is picked and what happens after.

  • Khajoor is left on the palm to ripen fully until it turns soft, sticky and dark brown. It is eaten as it is, with most of its natural moisture still inside.
  • Chuwara is made from dates picked at an earlier, firmer stage. They are traditionally boiled and then sun-dried until almost all the moisture is gone, which gives the wrinkled skin and hard bite.
  • Peela vs kala chuwara: the golden-yellow peela chuwara is the most common type in North India, while kala chuwara is darker and deeper in sweetness. We compare those two in detail in our peela vs kala chuwara guide.

When should you use chuwara?

  • Chuwara milk: simmer 2 to 3 chopped chuwara in a glass of milk for 10 minutes. The dates soften and lightly sweeten the milk.
  • Winter sweets: chopped chuwara works well in panjiri, gond ladoo and dry fruit ladoo, where its firm bite holds up.
  • Prasad and shagun: chuwara is part of many wedding and puja thaals because it keeps for a long time without spoiling.
  • Travel snack: it does not get sticky or mushy in a bag, so it suits long journeys.

Not sure how to soften it? Our guide on how to eat chuwara covers soaking times and seven everyday uses.

When should you use khajoor?

  • Straight snacking: one or two soft dates with a cup of tea.
  • Stuffed dates: slit and fill with an almond or a walnut half.
  • Sugar swap: blended khajoor paste sweetens shakes, kheer and halwa without refined sugar.
  • Breaking a fast: soft dates are a traditional first bite in many homes.

Can you swap chuwara for khajoor?

Yes, with a little prep. Soak chuwara in warm water or milk for 6 to 8 hours (or overnight), remove the seed and grind. It will be firmer and slightly less sweet than khajoor paste, so taste and add a little jaggery if needed. Going the other way, khajoor is too soft for recipes where you want chewy pieces, such as panjiri. These are rough kitchen guides, so adjust to your taste.

How to pick good chuwara

Look for chuwara that are whole, evenly coloured and dry to the touch, with no white powdery patches, damp spots or sour smell. Store them in an airtight jar in a cool, dry place. Our chuwara buying guide explains what to check in more detail. At ODM, our chuwara is handpicked and carefully sorted, with no artificial colours, no fillers and no preservatives added.
