- Step 2: Stir in the chopped onion, green chilli, cumin seeds, curry leaves and coriander. Rest the batter for 15 minutes so the semolina softens.
- Step 3: Heat a flat tawa or non-stick pan well. Whisk the batter again (it settles), then pour a ladleful from the outer edge towards the centre, in a thin layer. Do not spread it like a regular dosa; pour to fill gaps.
- Step 4: Drizzle a little oil around the edges. Cook on medium-high until the base turns crisp and the edges lift, about 2 to 3 minutes. Fold and serve hot.
Serve your ragi dosa with coconut chutney, tomato chutney or a simple sambar. It also pairs well with a spoon of pickle for a quick, filling meal.
