Pista Barfi Recipe: Easy Diwali Sweet in 30 Minutes

Quick answer: To make pista barfi, grind shelled pistachios into a coarse powder, cook them with a one-string sugar syrup and a little milk powder on low heat until the mix leaves the sides of the pan, then set it in a greased tray and cut into pieces. It takes about 30 minutes, needs only 5 main ingredients, and stays fresh for 7 to 10 days in the fridge.

Pista barfi (also called pistachio barfi, pista katli or pistachio fudge in English) is one of the easiest festive sweets you can make at home for Diwali, Bhai Dooj or a family puja. Pista is the Hindi word for pistachio; you will also see it called pista pappu in Telugu and pista paruppu in Tamil. If you have ever made kaju katli, this recipe will feel familiar, only greener and with a richer, nuttier taste.

What Do You Need for Pista Barfi?

This recipe makes about 16 small pieces (roughly 300 g of barfi).

  • 1 cup (about 150 g) shelled pistachios (pista), unsalted
  • 1/2 cup sugar
  • 1/4 cup water
  • 1/2 cup milk powder
  • 1 tbsp ghee, plus a little for greasing
  • 1/4 tsp powdered green cardamom (elaichi)
  • 2 tbsp slivered pistachios or almonds for topping
  • A few dried rose petals or silver varq (optional)

Use plain, unsalted pista. Salted, roasted pistachios will make the barfi taste odd and turn the colour dull.

How to Make Pista Barfi Step by Step

  1. Blanch (optional, for a brighter green): Soak the pistachios in hot water for 15 minutes, rub off the purple skins, and pat them completely dry. Skip this if you are short on time; the barfi will just be a little darker.
  2. Grind: Pulse the dry pistachios in short bursts to a coarse powder. Do not run the mixer non-stop, or the nuts will release oil and turn into a paste.
  3. Make the syrup: Heat sugar and water in a heavy pan. Once the sugar melts, boil for 4 to 5 minutes until the syrup reaches one-string consistency (touch a drop between your thumb and finger; it should form a single thread).
  4. Cook the mix: Lower the flame. Add the pista powder and milk powder and stir without stopping for 5 to 7 minutes.
  5. Check the dough: When the mixture leaves the sides of the pan and comes together as one soft mass, add ghee and cardamom powder and stir for one more minute.
  6. Set and cut: Spread it in a greased tray or on butter paper about 1 cm thick. Press the topping on gently, let it cool for 30 to 40 minutes, then cut into squares or diamonds.

Why Did My Pista Barfi Go Wrong?

Problem Likely cause Fix
Barfi is sticky and won't set Syrup was too thin or the mix was undercooked Put it back on low heat and stir 2 to 3 more minutes
Barfi is hard and crumbly Syrup went past one-string or the mix cooked too long Knead in 1 to 2 tbsp warm milk while it is still warm
Oily surface Pistachios were over-ground into a paste Grind in short pulses next time; blot gently with tissue
Dull, brownish colour Skins left on, or high heat Blanch and peel the nuts; always cook on low

Can You Make Pista Barfi Without Milk Powder?

Yes. Replace the milk powder with 1/2 cup crumbled mawa (khoya), or simply add 1/4 cup more pistachios. Without any dairy, the barfi becomes closer to a pista katli: firmer, thinner and more nutty. You can also make a two-layer pista-badam barfi by cooking a second batch with almonds and pressing it on top.

How to Pick Pistachios for Barfi

The colour and taste of your barfi depend almost entirely on the nuts. Look for shelled pistachios that are bright green inside, crunchy, and smell fresh, with no bitter or stale taste. Our pista buying guide explains what to check. For more ways to use the leftover nuts, see how to use pistachios in Indian cooking, and if you enjoy this recipe, try our kaju katli recipe next.

At ODM Masala, our dry fruits are handpicked and packed without artificial colours, fillers or preservatives, so the green you see in your barfi comes from the pistachio itself.

FAQ

How long does homemade pista barfi last?

It keeps for 2 to 3 days at room temperature and 7 to 10 days in an airtight box in the fridge. Bring it to room temperature before serving for the best texture.

Why is my pista barfi not green?

The purple skins on pistachios darken the colour. Blanching and peeling the nuts, and cooking on a low flame, gives a natural pale green without any added colour.

Can I use jaggery instead of sugar?

You can use powdered jaggery in the same quantity, but the barfi will turn brown and taste more caramel-like. Add it off the heat after the pista mix thickens so it does not curdle the milk powder.
