Nimbu ka Achar Recipe: Spicy Lemon Pickle at Home

Quick answer: To make nimbu ka achar, cut lemons into pieces, coat them in salt and haldi, then mix in a roasted, coarsely ground masala of methi dana and mustard seeds with red chilli. Keep the jar in the sun for 10 to 15 days and shake it daily, until the peels turn soft and the pickle tastes tangy rather than bitter.

Nimbu ka achar is the pickle almost every Indian grandmother makes: sharp, salty, a little spicy, and good for months. The spice mix is short, but the roasting and the patience are what make it work.

Also known as: lemon pickle or lime pickle in English, nimbu ka achaar or nimboo achar in Hindi, lebur achar in Bengali and elumichai oorugai in Tamil.

What Spices Go Into Nimbu ka Achar?

The backbone of a good lemon pickle is methi dana (fenugreek seeds). Lightly roasted and coarsely ground, methi adds a gentle bitter-nutty depth that balances the sourness of the lemon. Mustard seeds add sharpness, kalonji adds a mild onion-like note, and haldi gives colour.

Ingredients (for about 500 g lemons)

  • 500 g thin-skinned lemons (about 10 to 12), washed and dried completely
  • 3 tbsp salt (kala namak can replace 1 tbsp for extra tang)
  • 1 tsp haldi powder
  • 1 tbsp methi dana
  • 2 tbsp yellow mustard seeds (peela sarso) or black rai
  • 1 tsp kalonji (nigella seeds)
  • 2 to 3 tbsp red chilli powder, to taste
  • 1/4 tsp hing (asafoetida)
  • 2 tbsp sugar or jaggery (optional, for a khatta-meetha version)
  • 3 to 4 tbsp mustard oil (optional)

How Do You Make Nimbu ka Achar Step by Step?

  1. Dry everything. Wash the lemons, then wipe and air-dry them for a few hours. Any water left on the lemons, knife or jar is the main reason pickles spoil.
  2. Cut and salt. Cut each lemon into 8 pieces and remove the seeds (they turn bitter). Toss the pieces with salt and haldi in a clean, dry glass or ceramic jar.
  3. Roast the masala. Dry-roast methi dana on low flame for about 1 minute until it smells nutty and turns one shade darker. Do not let it go dark brown, or the pickle will be bitter. Roast the mustard seeds for 30 seconds. Cool both.
  4. Grind coarsely. Pulse the roasted methi and mustard to a coarse powder, not a fine dust. Mix in the kalonji, chilli powder, hing and sugar if using.
  5. Combine. Add the masala to the lemons and mix with a dry spoon until every piece is coated. If using mustard oil, heat it until it just smokes, cool it completely, then pour it over.
  6. Sun-cure. Cover the jar mouth with a thin cotton cloth and keep it in the sun for 10 to 15 days. Shake or stir with a dry spoon once a day. The pickle is ready when the peels are soft and the juice has turned thick.

Oil or No Oil: Which Version Should You Make?

Version Taste Texture Keeps for
No-oil (salt cured) Sharp, clean, very tangy Soft peels in thick lemon juice A year or more if kept dry
With mustard oil Rounder, spicier, pungent Glossy, masala clings to pieces 6 to 12 months, oil layer on top
Khatta-meetha (with sugar or jaggery) Sweet, sour and mild Syrupy, jam-like 6 to 12 months

No-oil nimbu ka achar is the most traditional in many north Indian homes, and it is also the version most people search for. If you prefer the pungent Punjabi-style flavour, add the oil. For a more Bengali-style pickle, a pinch of panchforan works well in place of the kalonji.

Why Is My Lemon Pickle Bitter?

  • Burnt methi: methi dana turns bitter fast. Roast it on low heat only until fragrant. Our guide to using methi dana covers the right roasting colour.
  • Seeds left in: lemon seeds release bitterness over time. Pick them out while cutting.
  • Not cured long enough: fresh lemon peel is bitter. It mellows only after 10 to 15 days in salt. Be patient.
  • Thick-skinned lemons: choose thin, juicy lemons with smooth skin.

How Should You Store Nimbu ka Achar?

Always use a dry spoon, keep the lid tightly closed, and store the jar in a cool, dry cupboard once it is cured. A glass or ceramic jar is better than plastic, which can hold smells. If you see white fuzz or a sour, off smell, discard that batch; it usually means moisture got in. Using fresh, clean spices also helps: ODM whole spices are handpicked, with no artificial colours, fillers or preservatives. If you enjoy homemade pickles, try our hari mirch ka achar recipe next.

FAQ

How many days does nimbu ka achar take to be ready?

Usually 10 to 15 days in good sunlight. In cloudy or cold weather it can take up to 3 weeks. It is ready when the peels are soft enough to press with a spoon.

Can I make lemon pickle without sunlight?

Yes. Keep the jar in a warm spot in the kitchen and shake it daily. It will take longer, often 3 to 4 weeks, but it will soften. Some cooks steam the lemon pieces for 5 minutes first to speed it up.

Can I use methi powder instead of whole methi dana?

You can, but freshly roasted and coarsely ground whole methi gives a better aroma and texture. Store-bought powder is finer and can taste more bitter, so use about half the amount.

For a pickle that tastes the way it should, start with fresh, nutty ODM Methi Dana and roast it just before grinding.
