Makhana Kheer Recipe: Creamy Vrat Sweet in 25 Minutes

Makhana kheer is a milk pudding made by simmering roasted fox nuts in reduced milk with sugar and cardamom until they turn soft and the milk thickens. Roast the makhana in ghee first, add it to milk that has already been reduced for about 10 minutes, and the whole sweet is ready in roughly 25 minutes without a single lump.

Also known as: makhana is called phool makhana or fox nuts in English, lotus seeds in some recipes, and tal makhana in parts of eastern India. It grows in the ponds of Bihar, which is where our own ODM Makhana (6.5+ suta, handpicked) comes from.

Why makhana kheer instead of rice kheer?

Rice kheer needs a long, patient simmer before the grains break down. Makhana is already puffed and dry, so it drinks up hot milk in minutes and gives you a thicker kheer far quicker. It is also naturally grain-free, which is why it appears on so many Navratri and Ekadashi vrat thalis when rice and wheat are set aside.

The texture is the real reason people keep coming back to it: half the makhana stays slightly chewy, the crushed half dissolves and does the thickening for you.

What you need

  • 1 litre full-fat milk
  • 1 cup makhana (about 25 g)
  • 2 tablespoons ghee
  • 5 to 6 tablespoons sugar, to taste
  • 4 green cardamom pods, seeds crushed
  • 2 tablespoons chopped pistachios and almonds
  • 1 tablespoon raisins
  • A few strands of saffron, optional

Use whole pods rather than ready-ground powder if you can. Crushing green cardamom just before it goes in makes a noticeable difference to the aroma.

How do you make makhana kheer step by step?

  1. Roast the makhana. Heat the ghee in a heavy pan on low flame and roast the makhana for 4 to 5 minutes, stirring often, until they feel crisp and snap cleanly when pressed. This step is what keeps them from turning slimy later. Set aside to cool.
  2. Reduce the milk. In the same pan, bring the milk to a boil, then lower the flame and let it simmer for about 10 minutes. Scrape the cream off the sides back into the milk as you go.
  3. Split the makhana. Crush roughly half the roasted makhana coarsely with your hands or a rolling pin and leave the rest whole. The crushed half thickens the kheer; the whole ones give you something to bite into.
  4. Simmer together. Add all the makhana to the milk and cook on low for 8 to 10 minutes, stirring every couple of minutes so nothing catches at the bottom.
  5. Sweeten and finish. Stir in the sugar and cook for 2 more minutes until it dissolves. Add the crushed cardamom, saffron, nuts and raisins, switch off, and let it rest for 5 minutes before serving.

One more thing worth knowing: kheer keeps thickening as it cools. If you plan to serve it chilled, switch off the flame while it still looks slightly loose, or loosen it with a splash of warm milk before serving.

Ways to change it up

  • Vrat version: swap sugar for jaggery or mishri, and skip the saffron if you prefer it plain.
  • Richer festive version: stir in 2 tablespoons of khoya along with the sugar.
  • Nut-forward: soak and grind 8 to 10 almonds into a paste and add with the milk for a badam-makhana kheer.
  • Dry fruit heavy: a generous handful of pistachios and raisins turns it into a proper Diwali sweet.

Can I make makhana kheer without roasting the makhana?

You can, but it is not worth it. Un-roasted makhana absorbs milk unevenly and can turn soft and slippery. Four minutes in ghee on a low flame fixes that completely.

Is makhana kheer suitable for Navratri vrat?

Yes. Makhana, milk, ghee, sugar, cardamom and dry fruits are all commonly accepted during vrat in most households. Practices differ from family to family, so follow what yours normally does.

How long does makhana kheer keep?

Refrigerated in a covered container, it keeps well for 2 days. Reheat gently with a little milk, since it thickens considerably overnight.
