Chana Badi Masala Sabzi Recipe: Traditional Sun-Dried Lentil Dumpling Curry in 30 Minutes

What Is Chana Badi?

Chana Badi (also called chana dal badi) is made from spiced Bengal gram paste that is hand-shaped and sun-dried over several days. Unlike fresh paneer or vegetables, badi holds its shape and absorbs flavours deeply, making it ideal for thick, spiced gravies.

Step-by-Step Method

Step 1 — Fry the badi: Heat 1 tbsp oil in a kadhai over medium heat. Add the chana badi pieces and fry, stirring gently, for 3–4 minutes until they turn golden and slightly crisp on the outside. Remove and set aside.

Step 2 — Build the base: In the same kadhai, add the remaining oil. Add cumin seeds and let them splutter. Add the chopped onions and sauté on medium heat for 7–8 minutes until golden brown.

Step 3 — Add tomatoes and spices: Stir in the ginger-garlic paste and cook for 1 minute. Pour in the tomato puree and cook for 5 minutes until the oil separates. Add Haldi Powder, Dhaniya Powder, Mix Sabji Masala, and salt. Stir well.

Step 4 — Simmer with badi: Add the fried chana badi to the masala. Pour in 1½ cups of warm water. Cover and simmer on low heat for 10–12 minutes until the badi softens and absorbs the gravy.

Step 5 — Serve: Garnish with fresh coriander. Serve hot with steamed rice, bajra roti, or plain chapati.
