Akhrot Buying Guide: How to Pick Good Walnuts
Good akhrot looks plump and pale golden-brown, snaps cleanly when you break it, and smells sweet and buttery. If a walnut is dark, shrivelled, oily to the touch, or smells sharp like old paint, it has turned rancid and no amount of storage will bring it back.
Also known as: akhrot in Hindi, walnuts in English, akrot in Marathi and Gujarati, and akhroat in Urdu. The two forms you will see in Indian shops are in-shell walnuts and shelled kernels (sometimes called giri).
Walnuts are one of the costliest things in an Indian dry-fruit box, and also one of the easiest to get wrong. Because they are rich in natural oils, they spoil faster than almonds or cashews, and a bitter batch is often blamed on the recipe when the nut itself was the problem. Here is how to buy well and keep them that way.
How do you pick good akhrot?
Whether you are buying loose from a shop or a sealed pack, run through this checklist:
- Colour: look for light golden-brown kernels. Very dark, blackish-brown pieces are usually old or over-dried.
- Shape: intact halves and large pieces mean careful handling. A pack that is mostly crumbs has been knocked about or is left-over grade.
- Feel: the kernel should feel dry and firm. Sticky or greasy surfaces mean the oil has started leaking out.
- Snap test: a fresh kernel breaks with a crisp snap. If it bends or feels soft and leathery, it has picked up moisture.
- Smell: sweet and mildly nutty is right. Any paint-like or sour smell means rancid, so walk away.
- Taste: a good walnut has a gentle bitterness in the papery skin and a buttery, sweet centre. Harsh bitterness all the way through is a bad sign.

How can you tell if walnuts have gone bad?
Rancidity is the main enemy, and it shows up in the nose before the eyes. Rub a kernel between your fingers and smell it: fresh akhrot smells faintly sweet, spoilt akhrot smells like old oil or turpentine. Other warning signs are a dull grey film on the kernel, sticky residue at the bottom of the jar, and any musty smell, which points to dampness. Do not try to rescue these by roasting; the off taste will still come through in your kheer or cake.
How should you store akhrot at home?
- Airtight, always. Move them out of the delivery pouch into a clean glass or steel jar the day they arrive.
- Cool and dark. Keep the jar away from the stove and out of direct sunlight, both of which speed up the oil turning.
- Fridge for a month or more. In Indian summers and humid coastal weather, the fridge is the safest place. The freezer works too and does not spoil the crunch.
- No mixing. Store walnuts separately from strong-smelling spices; the oil absorbs aromas easily.
- Refresh before use. A minute in a dry pan on low heat brings back the crunch of kernels that have softened slightly.

Many households soak two to four walnuts overnight and eat them in the morning. Soaking softens the kernel and removes most of the skin bitterness. It is a matter of preference and digestion, not a rule.
